My parents and I usually sit in our small garden and talk to any thing and sometimes my dear mom makes Iranian delicious desserts with different tastes and colors. I feel relax when I eat saffron desserts. I would like to offer you this delicious dessert. This saffron ice cream is all about balance and of course health and safe: heady saffron, floral honey, and bittersweet orange zest. We never use the industrial saffron color because it isn’t purity and safe but we usually use saffron extract. This saffron extract isn’t industrial but it is homemade saffron extract. In Order to you can do this action yourself while the color and perfume is more than industrial saffron color.
- 6 egg yolks
- 1/2 cup light honey
- 1/4 cup sugar
- 2 cups heavy cream
- 1 cup whole milk
- 3/4 teaspoon kosher salt
- 1/4 teaspoon saffron threads or saffron extract
- 1/2 teaspoon freshly orange zest from 1 orange
First of all, put the egg yolks, honey, and sugar together into a bowl and stir them until thoroughly combined. Add and stir cream, milk, and salt. Then cook over medium heat while you stir frequently the materials until a custard forms on the back of a spoon but a finger swiped across it leaves a clean line, about 170°F.
Now you are ready to make the saffron ice cream so pour through a strainer into an airtight container and stir in saffron and orange zest. Cover and chill in refrigerator until custard drops to 40°F, 4 hours to overnight.
Churn custard according to manufacturer’s instructions. Transfer ice cream to airtight container and chill in freezer for at least 4 to 5 hours before serving.
